Roasted vegetables one of the healthiest dish ❤️💚❤️💚

This is one of the healthiest food in this world. Very simple to cook. You just need to cut all vegetables in cubes. You can eat this roasted vegetables according to your choice. 

Let’s check the ingredients: 

Pumpkin 1 and 1/2 cups 

Potato 1/2 cup 

Kumara sweet potato 1 and 1/2 cups

Mushroom shiitake one 1/2 cups 

1 Onion cut into chunks 

Green chili 2 optional 

Ginger and garlic chopped 1 tbsp optional 

Pepper 1/2 tbsp 

1 carrot 🥕 

Salt as per taste 

Olive oil 3 tbsp

Coriander leaves 1 tsp 

You can add any vegetables like mushroom, snow peas other vegetables according to your taste. 

Cooking method: 

In a non stick pan fry heat oil and add potatoes, Kumara and pumpkin. Now add salt, pepper, green chili, ginger garlic paste. Cook for 6 minutes in medium heat. Now add shiitake mushroom and carrots and cook for 4 minutes. All done. If you need more time then shimmer it for 5 minutes more. 

Voila

Ready this world healthiest roasted vegetables. You can eat this as a salad, wrap, porota or steam rice. Very yummy and tasty. Must try this one. I love this in summer and also winter ♥️💚♥️💚🥰😘
