Lau baji or bottle gouard fry

This yummy Bengali Lau baji or bottle gouard curry is very yummy and perfect match with rice or roti.
Today I made this one a bit spicy 🌶 which is mild in taste. In India at West Bengal of Kolkata, Assam, North Indian cuisine, Pakistan and Bangladesh they cook this one following this recipe.
Let’s check out the ingredients :
Lau 800 gram
1 tomato 🍅 chopped
2 green chili 🌶 cut in halves
Panch foron optional 1 & 1/2 tsp
Salt as per taste
Chili 🌶 powder 1 & 1/2 tsp
Turmeric 1/2 tsp
Coriander powder 1 tsp
Cumin powder 1 tsp
Whole cumin seeds 1 tsp
Oil 3 tbsp
Curry powder 1/2 tsp
Tofu 1 cup cut into slices
Ginger and garlic paste 1 tbsp
In a pan heat oil and then fry cumin, add onion, green chili 🌶 and fry until it’s translucent. Now add ginger garlic paste along with all spices . Add bottle gouard or Lau and cook with a lid for 5 minutes. Now stir vegetable and add half cup of water to boil the vegetables. Cover again and cook for nearly 10 minutes. Now check the vegetable if you need to boil a bit more then cook for more 5 minutes!
In a different pan fry tofu slices. This tofu fry for few minutes, then mix it with bottle gouard vegetable.
Voila! Yum yum Lau baji or bottle gouard fry is ready.
