Thai prawn curry ❤️❤️

One of the healthy curry dish in my favorite lists.

This Thai prawn curry is extremely delicious and it came from Thai cuisine. It is not only popular in Thailand, but also all over the world. Each and every corner from the world Thai food lovers know about this mouthwatering dish which is favorable in Thai delicacy. Let’s check out the ingredients:

Prawn 12

Olive oil 4 tbsp. You can use coconut oil or any oil if you want.

Salt as per taste

Red dried chili 🌶 3/4

Tomato 🍅 1

Onion big 1

Garlic cloves 4

Galangal or Thai ginger 1/2 inch

Pepper 1 tsp

Lemon juice 🍋 optional

Sugar optional . You can use 🍯 honey.

Cardamom 1 optional

Bay leaves 2

Lemongrass 1 stick

Fresh Thai red chili 🌶 2

Eggplant 🍆 1

Red Capsicum 1 cup

Coconut milk 400 ml

Coriander powder 1 tsp

Pineapple 🍍 fresh one 1 1/2 cups

Coriander leaves 3 tbsp

Marinate prawn:

With salt, pepper, red chili powder 1 pinch and keep a side for 5 minutes.

In a pan heat oil. Then fry cardamom and bay leaves. Then fry prawn for 2/3 minutes and keep aside. Then add grind spices 3 tbsp or according to your taste. Fry it until the oil comes on the top. Then add eggplant and salt, fry for 6 minutes and during that time cover it with a lid. After then add milk and cover this again, if required then add some water. When the water starts to boil nicely then add prawn, pineapples and sugar and cover it again. After few minutes add pineapple and cook for 3 minutes. Finally garnish with lemon juice, Coriander leaves and tomato 🍅.

Making spices or masala:

Soak all red chili for 10 to 15 minutes. Then in a blender blend all spices. This is the main part of this curry.
