Samocha and singara

Today we made samocha and singara at Apu’s place. The whole credit goes to apu. It’s Christmas holiday, so it was sudden plan to make that delicious snacks. It is very popular in Bangladesh, India, Pakistan, Nepal, Srilanka and many more countries. The magic is some cooked yummy fried food will keep inside the roti or bread. It has 3 main steps. Let’s check out the ingredients: 6 potato 2 green chili Ginger garlic paste Onion chopped Pepper 1/4 tsp Methi or fenugreek seeds 1/4 Cooking oil for fry Coriander leaves 2tbsp Radhuni, coriander powder, fennel seeds or mouri: all mixed together. Then used 1 tbsp in the curry. Roti: Plain flour 4 cups Water Egg Nigella seeds / kalojirey Salt 1 Step 1 : In a pan we will cook cube cut potatoes for samocha or samosa. Firstly hot oil in a pan and add panch foron. Then add onion and fry for 2 minutes. After then add potato and fry slowly in a medium heat. Now add all of spices one after another and cook potato slowly. Approximate after 12 minutes your potato pur or curry is done. Let it cool for 15 minutes. Step 2: In a bowl take flour and mix with salt , nigella seeds and baking soda it’s optional, mix well all, so there will be no lump. Then add water if you want add some warm water and egg to make the dough soft and quickly to make the dough. But I recommend that a bit hard dough is good for making samocha roti. Then you have to avoid egg. We used here both kind of soft and hard roti. Then in a roti maker make small ball shape and press evenly in a board to make the roti. Step 3: Now it’s time to make the samocha. You now cut the roti in to half. Then take half and fold it according to samocha or singara shape. Then fry it with oil on your stove. Sister told that it is more than 30 years old. Omg I feel like it’s older than me ... he he. That gentle lady is living in Sydney since 1975. She and sister has a great experience of life.
